Chicken with Orange Sauce

Ingredients: (serves 4)

- 1 tbsp olive oil
- 1/4 cup brandy
- 2 tbsp Triple Sec
- 1/2 cup orange juice
- 1 tbsp finely grated orange peel
- 1/2 cup heavy cream
- 1 cup water
- 1 chicken boullion cube
- 1/4 tsp ground black pepper
- 2 tbsp minced red onion
- 4 boneless, skinless chicken breasts
- Slivered almonds to garnish

Directions:
1) In a saucepan over medium heat, heat olive oil, add minced red onion and saute 1-2 minutes.

2) Add brandy, triple sec, orange juice, water, boullion, and orange peel, and heat untill boiling.

3) Reduce heat and add cream, stirring constantly untill thickened and bubbly.

4) Add pepper, stir, and remove from heat.

5) Place chicken in a greased baking dish.
