Rhubarb Bread

1 1/2c Brown Sugar
2/3c Veg Oil
1tsp Vanilla
2 1/2c Sifted Flour
1tsp Soda
1tsp Salt
1c Sour Milk
1 1/2c Raw Rhubarb - Finely Diced
1/2c Walnuts
1/2c Sugar
1tbls butter

Combine Egg/Brown Sugar/Oil/Vanilla beat till smooth. Sift flour with soda and salt. Add to first mixture. Beating until smooth after each mixture. Stir in Rhubarb and nutz. Turn into 2 greased 8.5 x 4.5 x 2.5 loaf pans. Crumble Sugar and butter together and sprinkle over each loaf. Bake at 325 degrees for about 60 mins. Cool on rack
